Can we not find a suitable switch that carries the current instead of all this damned awkward plugging and unplugging connectors.

Without knowing that, any answer would just be guessing.

What are you wanting the switch for? If it's just a motor on/off, you would have no throttle control, fail-safe, or battery protection. The speed controller has a built-in flat battery device that turns the motor power off BEFORE the receiver stops working, so you can get the model down safely, although you should have landed before that arises!
You would need a switch that weighs a couple of grams, takes up virtually no space, and can switch up to 100 amps! They are around, but made of unobtanium.

What awkward plugging and unplugging are you referring to? Apart from the battery, once a model is set up, there is nothing TO plug in or unplug.

My guess is the ESC is either trying to tell you that the throttle channel is not receiving the appropriate signal (ESC plugged into the wrong channel) or more likely the throttle is not closed FULLY and that can means that the throttle trim has to be set to full low as well.
As a safety feature the ESC will only arm the throttle, and go through the cell count beeps, when the Tx is sending the lowest possible throttle signal.
As far as I am aware only the motor can make a beep noise. No Rx or ESC has any form of 'sounder' and most ESCs now have 'auto throttle range' as well.

Again as far as I am aware an ESC cannot remain in program mode as until it has signalled it has accepted a change it is not saved and it reverts to the factory setting - as you will likely find out if you ever try programming an ESC from the Tx using just the throttle and beeps.
Of course if you are sure the throttle is fully closed it is possible the ESC has a fault. The power for the Rx and the servos comes from the completely independent BEC circuit so they will work normally.

Some progress at least. As to programming ESCs, no way. I have no idea what that's all about and care even less so long as it simply turns the whizzy bit on and to some extent varies its speed...It does, so satisfied.
And the beeps stop after the initial plugging in faff.
Eric...Deans or XT60, pulling connectors apart seems like a damned faff to me when a switch would be better and much more convenient. Are they so unobtainial?

You still have to unplug, to take the battery out of the model, and to charge it. NEVER charge in the model inside, or near anything that can burn - just in case. Never leave a battery in a model, connected or otherwise.
You don't have car insurance BECAUSE you are going to crash, do you!

To check the failsafe - prop OFF, rx battery connected, open the throttle to about 30% or more, then turn the transmitter off. The motor should run for another second or two, then stop. If it does anything else (ie go to flat-out) you need to recalibrate (reset) the failsafe.

The beeps when you plug in tell you the speedo has recognized the number of cells in the battery - one beep per cell, then a pause, and another beep (sometimes a little tune) tells you it is armed and ready to go.

Can't help with the rates/expo on the DX7, I don;t have one. I use Futaba and Taranis gear.

I found that leaving a battery connected lead to it draining once before, but it's the plug/unplug thing when setting up a model that seems such a chore. Obviously I take the battery out to charge. All my charging is done on the Workmate that lives next to my (brick) shed. But it would be good to set the model up at home and then take it to the field and just switch it on, instead of all the taking out of hatches, stuffing batteries in and re-hatching at the field. Especially as my new club doesn't have any start up tables so everything has to be done on the ground. Takes me ages to get back up on my feet, alas.!
