How would things work with a twin motor set up? I understand that each motor needs an esc and why they need one each, but would you need a lipo for each motor? If you could use one battery would it have to be double the size compared to if you use 2 batteries?

on a twin i would use 1 battery as it will stop you having one motor deadsticking in mid flight, which is the death nell for a twin.

If you wanted the same flight time using one battery as you would using two, then it would need to be twice the capacity.
But each of the two motors is only using half (roughly) the power that one single battery would be using.
The only time you would need to use two batteries would be if you needed to put the batteries in the engine pods, or in separate locations to balance the plane or because of space.
I don't know if I would be concerned about one motor failing enough to make it a major factor in the choice of the number of batteries, as the throttle could shut down the other motor, and some planes are manageable on one motor, unless it was known to be a plane that would immediately go out of control if one motor failed.
The only twin I have is the Twinstar, and that uses one battery (sometimes two in parallel, but effectively one) and I believe it is manageable on one motor.
On a large expensive plane, especially EDF, I would go towards separate batteries, and a separate receiver battery
