It certainly appears that a 5050 Kv515 motor and 16x8 prop should be well within the capability of the 120A ESC and further using a 3s would reduce the amps still further.
The fact it cuts out very quickly at 1/2 throttle and the beep beep suggests that at that point the ESC is no longer getting a valid signal from the radio.
This could be the result of the ESC being incorrectly programmed so it does not understand the signal above half throttle from the radio.
Or
How big is the 3s battery? Even with 3s that motor is going to try to draw quite a few amps. It could be that the battery voltage is dropping to a point even at at half throttle that the ESC simply cuts out. If the ESC is expecting 5 or 6s supply then 12V is pretty low.
Many high voltage ESCs specifically state a minimum cell count.
If it still cuts outs with no prop it would certainly indicate an ESC programming issue rather than anything amp/heat related.
That's about all I can think of.

If the ESC got hot with nothing running, that's an electrical fault somewhere, such as a short-circuit.
How many volts is the motor designed for? (or how many cells).
Electricity is funny stuff, if you reduce the volts to a device (the motor) it pulls MORE amps to do the same work. So as the battery volts fade, the motor uses more power. (That's one reason why electric cars overheat the battery and catch fire!)
I see no mention of the current drawn by the motor, so assume you didn't have a Wattmeter in line. As I put before, you cannot see how much power is being drawn - you have to have a meter in there! There is no engine sound, or exhaust smoke, to say if the motor/speed controller is happy or not.
I use a 10 x 6 on 3S - or a 14 x 6 for a short burst for take-off, then about half power for the flight. I get about five minutes, then the pack is down to about 3.5 volts on the lowest cell, and starting to get warm = landing time.

- On looking at this plastic model i have of it i see the tail plane is wrong it comes out of the fuselage horizontal and then go's up in the dihedral i should have gone with my first choice Ziroli DB5
- new esc is 60 quid
- where are the numbers coming from 1 2 3
- I have a w meter on order along with a 4s 5000 lipo

I've not watched it all the way through, but it looks like some had flat tailplanes, and some had Vee's Also some appeared to have in-line engines, and some radials! (but those might have been random Mosquito photos,as 109's and 190's appear later!) Nice clip of Gibraltar partway through!

I mean it exits the fuselage flat for a short distance to clear the fuselage and then rises, this plan has the 2 halves joined with dihedral braces from the centre

Anyway i cut it off and glued some more on
Been cleaning the edges of the flaps and ailerons where i glassed them ready for the second side to be done
Or a second coat of resin over the glassed side
Been in hospital today having treatment to my shoulder some form of injections he did warn me when i went to the chronic pain clinic that it would hurt, took half an hour to do the injections after a 4 hour wait, had to be there at 8 this morning and got seen at 12 and i had 2 nurses holding my hand whispering sweet nothings in my hearing aid and boy did it hurt, it might help
Got to go to the heat clinic Wednesday

And i got these readings
.17 AH
14.12V
47.55WH
676.6WP
And it pulled 4Kg
So then i put the other ESC on and go snap crackle and pop with white magic smoke from the ESC as soon as i made the connection
So that ESC is kaput never worked before when i tried them but i never got the display i just got it just did nothing, and its blown the new 30 quid W meter
I F$&%*£ hate electric

I'm not sure what that reading of 676.6 WP is. The other numbers look ok. My meter is so old I've lost the instructions!
I notice that you have used 'bullet' connectors for the battery and ESC (and the wattmeter) Are you sure you didn't plug one of them in backwards when you fried it? It s very easy to do.

It is also possible that the Watt meter has overcurrent fuse protection. It would only need replacing and all would still be well.
I afraid what happened is a bit of bad luck as most ESCs fail to open circuit so apart from not working nothing else gets damaged when connected up to a LiPo.
